I was at my friend’s place and wanted to make a dessert but I was confused what to make. I called my food help line friend, Miti and she suggested me to make blueberry cobbler. She immediately sent me the recipe but I did not had a chance to try it. One day I was in a mood to try new dessert and this blueberry cobbler came into my mind. I tried it with mixing strawberries and blueberries and came out delicious! On the next week I made a huge tray of berry cobbler and it was a super hit! So here is the recipe of berry cobbler. 😉
Blueberry(fresh/frozen) – 1.5 cup
Strawberry(fresh/frozen-chopped) – 1.5 cup
Powdered sugar – 3 tbsp + 1/2 cup
Orange juice – 1/3 cup
All purpose flour/wheat flour – 2/3 cup
Baking powder – 1/4 tsp
Salt – pinch
Soft unsalted butter – 1/2 cup
Yogurt – 2 tbsp
Water – 2 tbsp
Vanilla Extract – 1/2 tsp
In a mixing bowl, mix 1.5 cup chopped strawberries , 1.5 cup blueberries, 3 tbsp sugar and 1/3 cup orange juice. Mix well and spread it over baking dish.
In a medium bowl, cream 1/2 cup butter and 1/2 cup sugar until light and fluffy.
Add 2 tbsp yogurt, 2 tbsp water and 1/2 tsp vanilla extract. In a small bowl, mix 2/3 cup flour, 1/4 tsp baking powder, and salt. Gradually add flour mixture into wet ingredients , stirring just until ingredients are combined.
Drop batter by rounded tablespoons over berry mixture. Try to cover as much of filling as possible. Bake in preheated oven on 350º F (180ºC) for 35 minutes, until topping is golden brown and filling is bubbling.
Serve hot berry cobbler with vanilla ice cream! enjoy 🙂
