Anuj went to Mumbai last month and he ate this dessert called ‘tiramisu’ which is an Italian dessert which means ‘lift me up’. He requested me to make this dessert soon! I researched for the eggless tiramisu recipe and finally I nailed it yesterday! It was so so delicious that I can’t describe. It is made from cream, cheese, espresso coffee and wine. Traditionally lady finger biscuits are dipped into coffee water and cheese is mixed with rum. But lady finger biscuit contains eggs. So I baked an eggless basic vanilla cake and did not use any alcohol. The traditional recipe uses a rich, soft cheese called mascarpone. I visited many stores and finally found it in Safeway! but if you do not find mascarpone cheese then you can use cream cheese. Ok then.. lets start with the recipe!
For coffee Syrup
3 tbsp coffee powder
3 tbsp sugar
1 cup warm water
1 cup mascarpone cheese
1 cup whipping cream
3 tbsp icing sugar
3 tbsp cocoa powder
In another bowl beat the 1 cup mascarpone cheese with hand blender. Add the beaten whipped cream mixture and fold gently. The spread is ready, keep it in refrigerator.
Add 3 tbsp coffee powder, 3 tbsp sugar into 1 cup of warm water and mix it well. Allow it to cool down before using it.
Now for assembling, I used bread loaf tray. Dip the cake pieces into coffee syrup for 2-3 seconds and place the cake first and cover the base of the tin.
Now apply thin layer of cheese spread and cover the cake base. Now again dip the cake pieces into coffee syrup and put on the top. again apply a layer of cheese spread. Again cake and lastly cheese spread.
At the end, dust the cocoa powder on the top and refrigerate atleast 4 hours or till the tiramisu sets. Cut into equal pieces or any fancy shape of your choice and serve immediately.
